The Far View Lodge at Mesa Verde National Park opened this week, including the award-winning Metate Room restaurant with its grand vistas.
Known for its contemporary menu, the Metate Room features a new menu inspired by regional foods and flavors. Following the lead of the ancient Puebloans, the Metate Room incorporates roasted corn, black beans, nuts, herbs and wild game into its new menu. The restaurant is committed to offering sustainable cuisine using locally grown ingredients.
Sample dinner options include a red pepper with asparagus and black bean corn salsa; corn crusted trout with red pepper coulis cream; slow-roasted pork and chili stew with potatoes, carrots, hatch green chili and Mexican cheeses and a grilled portabello mushroom with roasted squash and Dove Creek black beans. For breakfast, the restaurant offers a grand buffet.
Open daily for breakfast and dinner from 7 a.m. to 9:30 p.m., the Metate Room received the 2010 Award of Culinary Excellence from the American Culinary Federation Colorado Chefs Association.
